Vegan Banana Chocolate Chip Cookies

Well my husband ate the last of the eggs for breakfast this morning, so when it came time to making the cookies I was so desperately craving, I had to improvise a little. I usually cook with eggs for certain desserts, such as really amazing chocolate chip cookies. It’s the dairy that I really try to avoid. Today there we no eggs to be had, so I reached for that ever-aging nanner sitting in our fruit bowl, and went to work.

For my super delicious choc. chip cookies that I always make (from the back of the trader joe’s choc. chips bag) I use eggs like the recipe calls for, and then sub the milk and butter for coconut milk and coconut butter. Oh they are heavenly!  Anyway, the Vegan Banana Chocolate Chip Cookies are pretty darn tasty too!  They were just the warm chocolaty cookie I was looking for on this chilly Saturday afternoon. 🙂  Enjoy!

 

Ingredients:
1 large banana
1/2 cup Earth Balance Or Coconut Butter
1/4 cup brown sugar
2 cups flour
1 tsp salt
1 tsp baking powder
1 tsp vanilla
1/2 c. chocolate chips
1/2 oats

 

Directions:

1. Preheat Oven to 350

2. Cream butter and bananas together in a mixer and add sugar.

3. In a separate bowl mix together salt, flour, oats, and baking powder. then mix in with butter mixture.

4. Mix in vanilla and chocolate chips. ( if you find your dough is to stiff, add a little “milk.” I had to add some coconut milk to mine. It really depends on your banana.)

5. Drop and shape cookies on a greased cookie sheet. Bake for 15 minutes.

6. Gobble them up!  MMMMMM

Rompers in the Winter?…Yup!

I received a cute little romper for Christmas from my thoughtful hubby. He picked it out all by himself 🙂 Such good taste my man has!  I have been itching to wear it, but the winter weather was not cooperating with my summer wardrobe choice. Even though January is not too cold in my neck of the woods, it’s definitely not shorts weather, unless you want to pare those shorts with some chattering teeth and goosebumps. A Sweet Theme For My Sweet Girl

WOW! My little girl will be turning 1 at the end of the month. Don’t even get me started on how fast this year has flown by! Really, REALLY, fast!!  My life has changed so much (in an amazing way), and now we can’t even remember what life was like without our little sweet heart! We just love her so much!

For her first birthday party I was originally thinking of a tea party theme until I realized hot tea and toddlers aren’t rally a good mix… not my best idea. Then I decided on a cupcake theme. To my pleasant surprise cupcake themed decor is everywhere!  Here are a few adorable ideas I have found on my search.

Spending Time With My Long Lost Friend Tracy

Well the holidays are over and my hubby is back to work, so it’s time to get down to business. I am cleaning out the refrigerator of all the delicious fatty desserts (maybe I’ll save a few lol) and getting back on track with my healthier eating habits. I am also spending some much needed time with my girl Tracy Anderson.

No I don’t actually know her… I wish lol, but I really love her workouts. Her workout videos are broken down into cardio-dance and strength training/muscle conditioning. Tracy’s moves are like nothing you have seen before, unless you have seen them from her that is. Her moves and techniques are innovative and some are slightly awkward lol, but it really works! If you don’t mind shakin’ and shimmin’ your way to fitness.

So today is the day! Time to get my rear into gear! I guzzled down a large glass of carrot, spinach, apple, and mango juice and dug out the sports bra and sneakers. When I say I dug it out, I’m not kidding. Those babies were WAY at the bottom of the drawer. It’s safe to say it’s been awhile since I’ve suited up in my workout gear.
